For the dip:
  • 1 1/4 cups shredded Gruyère cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Method
 

  1. Cut the bacon into small pieces and cook in a large skillet over medium heat until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain, then crumble into bite-sized pieces once cooled. Leave about 2 tablespoons of bacon fat in the pan—this is liquid gold for flavor. Add your sliced onions, sugar, and salt to the same skillet and cook over medium heat for 5 minutes, stirring occasionally, until the onions begin to soften and release their moisture.
  2. Lower the heat to medium-low and continue cooking the onions for 20-25 minutes, stirring every 3-4 minutes to prevent sticking. You're looking for them to turn a deep golden-brown color—this slow process develops the sweet, complex flavors that make caramelized onions special. I find that a little patience here is worth it; don't rush this step or you'll lose that rich, sweet character. Once deeply caramelized, add the sherry and cook for 1 minute to let the alcohol cook off, then stir in the thyme, hot sauce, and Worcestershire sauce. Remove from heat and let cool slightly.
  3. While the onions finish cooking, preheat your oven to 400°F. In a medium bowl, combine the sour cream, mayonnaise, and black pepper, stirring until smooth. Add the garlic powder and mix well. This creamy base will bind all your flavors together.
  4. Fold the caramelized onions from Step 2 into the cream mixture from Step 3, then gently fold in the crumbled bacon from Step 1 and the shredded Gruyère cheese. I like to reserve a small handful of cheese to sprinkle on top before baking—it creates a wonderful golden crust. Transfer the dip to a baking dish (about 8x8 inches or similar) and smooth the top, then sprinkle with the reserved cheese if desired.
